Being a warmer climate Shiraz Gin, this gin displays black fruits, liquorice and subtle spice. The palate is rich and juicy, with the Signature gin interplaying, adding complexity.
Description
We connected with our good friends at Roman Road Vineyard in Chittering Valley, and sourced a single vineyard batch of old vine Shiraz. Growing in a much warmer climate than the Shiraz from the Margaret River region, this Perth Hills fruit is packed full of juiciness.
The process was very similar to the 2022 Shiraz Gin – we machine harvested the entire vineyard, and processed the grapes into several parcels. The riper parcel was basket pressed and kept very cold awaiting the gin, the least ripe parcel was made into our base wine, and then gin. The 2 parcels were combined, resulting in the 2023 Shiraz Gin.
Bottled by hand with minimal filtration. This gin will throw some sediment in the bottle over time just like a fine wine.

Enjoy this gin straight over the rocks or use to make our famous Bloody Sour, 75ml 2023 Shiraz Gin, 30ml Lemon Juice, 15ml simple sugar syrup, add 15ml of egg white or substitute, we use Wonderfoam. Shake and strain into a martini glass.
