Honky Nut Gin

The Marri Blossom forms during vintage, producing beautiful yellow flowers that attract birds, in turn keeping them away from our vineyards. Several months later this flower develops into a Honky Nut (aka Gum Nut). We let the black cockatoos harvest the honkey nuts from our trees on the property, then we collect them to distill with our Signature Gin to create a truly Australian Gin. This gin makes the perfect Martini – quintessentially Australian.
