A lovely sophisticated wine.
Description
100% Sauvignon Blanc sourced from a single vineyard just South of Witchcliffe. The grapes were harvested in the early hours of the morning for immediate processing to maintain the freshness and aromatics of the fruit. Made in traditional Bordeaux style, fermentation was carried out in new French oak barriques to give the wine a depth of flavour, texture and complexity. After 3 months of maturation on yeast lees the wine was stabilized, fined and filtered for bottling.
